A New Menu Item - Cod

Our menu for the week of March 1st features two new items, one of which is fish tacos with wild-caught cod. Cod offers a variety of health benefits. Let’s take a look:

• Low Calorie, High Protein: A 3oz serving has 85 calories and 20g protein.
• B Vitamins: B6 and B12 vitamins found in cod help to protect your nerves and create red blood cells.
• Low in Mercury: Cod is lower in mercury than most other types of fish.
• Phosphorous: This mineral helps build strong bones and teeth.
• Selenium: An essential mineral (must be obtained through diet) that supports thyroid health and metabolism.

Why We Love Shrimp

Featured on this week’s menu is our new Bang Bang Shrimp - and for good reason! Shrimp are a great combo of low calories with lots of protein and packed with nutrients.

• Low In Calories: 84 cals per 3oz (usually about 10 shrimp)
• High in Protein: 18g protein per 3oz
• No Carbs
• Good Source of Omegas
• Great Source of Iodine: Dietary iodine helps support your thyroid and brain health
• Great Source of Selenium: For thyroid function and metabolism
• A Variety of Other Nutrients: 20 vitamins and minerals such as B12, phosphorous, choline, and copper among others

The King Cake Tradition

Mardi Gras is a time of celebration that includes parades, costumes, music, and indulgences of different kinds. One fun indulgence that’s been around for roughly 300 years as part of this tradition is the king cake.
  • King cake is a circular, frosted, bready cake that is typically enjoyed between January 6th and Fat Tuesday as part of the Mardi Gras/Carnival season.
  • Some varieties of king cakes contain fruit or cream filling.
  • The cakes are decorated with frosting and sprinkles in the traditional Mardi Gras colors of green, gold, and purple (representing faith, power, and justice).
  • Interestingly enough, there’s a small plastic figurine of a baby that gets hidden inside the cake. It’s typically included on the side if you get it from a bakery so you can hide the baby yourself and avoid eating baked plastic.
  • Modern tradition says that if you find the baby in your slice of cake, it’s a sign of future luck and prosperity. This lucky person is also required to buy the king cake next year and may be crowned the king or queen for the evening.

February is designated as American Heart Month to remind everyone to take care of their heart to enjoy a long, healthy life. There are quite a few things you can do to help reduce your risk of heart disease. Here are a few of the big ones:
• Get your blood pressure and cholesterol checked to ID any existing issues
• Eat heart healthy foods such as leafy greens, vegetables, fruits, nuts, and lean meats
• Get regular exercise
• Quit smoking
• Maintain a healthy weight
• Get enough sleep

Healthy Ideas for Valentine’s Day

If you want to show someone you care on Valentine’s Day, but don’t want to throw off their normally healthy habits, we have some ideas for you:

• Dark chocolate-covered nuts can provide you with flavonoids and protein instead of just empty calories.

• Give red fruits such as cherries, strawberries, and even Ruby Red grapefruit to impart your loved one with fiber, antioxidants, and sweetness from natural sugar.

• Consider a hike or activity that gets you both out doing things.

• Cook something new (or an old favorite) together with your Valentine. This allows you to know exactly what you’re eating and control the ingredients to make smart choices.

• Fruit smoothies are a sweet way to pack all the benefits of whole fruit into a single glass. A frozen banana and some strawberries, cherries, and raspberries will give you a festive pink drink that’s nutritious.

• Our low-carb protein balls are a great way to indulge while keeping the calorie-count low and even getting in some protein!

What Is Coconut Sugar?

When it comes to making things sweet, there is no shortage of options. One natural choice that’s become popular recently is coconut sugar. Let’s look at what it is and why it’s different than regular sugar:

• Coconut sugar is a natural sugar made from dehydrated coconut palm sap that flows through the plant.

• It’s minimally processed, unlike refined white table sugar.

• The color and shape is similar to unprocessed raw sugar but with more variation of light and dark browns and granule size.

• It contains trace amounts of iron, zinc, calcium, potassium, and even polyphenols and antioxidants. Regular sugar offers none of these.

• It also contains a fiber called inulin that helps slow glucose absorption and give coconut sugar a lower Glycemic Index than regular sugar.

• Coconut sugar should still be used in moderation since it’s not a low-calorie food.

The Health Benefits of Carrots

They’re crunchy, orange (usually), and included on our menu regularly. Carrots are powerful vegetables that you’ve likely been eating since you were a kid and there’s a reason they keep showing up - they offer a variety of health benefits.

- Weight Management: Carrots are 88% water and that combined with their fiber content help you feel full for longer. This can help you avoid making poor food choices and overeating. They’re also low in calories with only 52 in a one cup serving.

- Eye Health: One large carrot can provide 200% of your daily needs of Vitamin A, which promotes lung, skin, and eye health. Additionally, the antioxidants lutein and zeaxanthin help protect your retinas and lenses.

- Blood Sugar Regulation: Carrots are low on the Glycemic Index, so not only do they not spike your blood sugar, their soluble fiber content can help balance it. They also support a healthy digestive system and feed the healthy bacteria in your gut.

- Lower Blood Pressure: The potassium found in carrots helps to lower blood pressure by balancing the negative effects of salt.

- Variety of Vitamins: There are many vitamins and minerals in carrots including beta carotene (that converts to vitamin A), biotin, K1, and B6. These help with everything from metabolism to bone health.

    Amanda is a mother of three (10, 7, and 5) and has been married for 14 years.   My weight loss journey started July 17, 2008, one day after my daughter's first birthday.  Tipping the scales at 235 pounds at 5'3, being an over weight, over tired, out of shape role model no longer appealed to me and I knew it was time for a change.   Three pregnancies later, I had lost a total of 105 pounds.  I had run 2 marathons and dozens of half marathons.  Something was missing.  I was thin, but I wasn't fit.  I wasn't healthy.  I could feel it in my insides.  I was 136 pounds and a size 8.  Something didn't add up.   I got my certification in personal training, nutrition, weight management, and dove into supplementation and whole foods.  90 days later, I gained 10 pounds and lost two pants sizes (8 to a 4). 
     
    Continuing on this path, all of my clients wanted to know how I was doing it.  I always dreamed of creating a business that truly added value to people and improved their health.  My husband, Grant, and I decided it was time to take that leap.

    December 9, 2016, Simply Prepped Meals was born.  Based around the mission of providing whole food based nutrition to people's doorsteps, we set out to create a new idea that fast food didn't have to be expensive or bad for you.   Six months later, we built our permanent location in Cynthiana, IN.  Then, January 2, 2018, we entered into a partnership with the YMCA of Southern Indiana to continue spreading the word of meal prep and eating with purpose.
